Pumpkin Pancakes

Pancakes are a huge hit in our house...they never last long. It's scary to think that I'm almost to the point of needing make double batches in order to have enough. I find this fact shocking since my boys are only 7 and 3 - isn't this something I would need to do when they are, say...17 and 13??!! Feel my pain yet? I thought so...

So anywho - we ate breakfast out on Saturday morning, and the boys had pumpkin pancakes. They were delicious!! They were so good that I had to find a recipe for is what I came up with...and we had them for dinner tonight! Just for the record, they taste wonderful with maple syrup or whip cream (the kind in the can!) and I would suggest doubling the batch too. I ended up making a 2nd batch!!

Pumpkin Pancakes (single batch)
1 3/4 c. milk
1 c. pumpkin puree
1 egg
2 T. vegetable oil
1 T. distilled white vinegar
4-5 T. packed brown sugar
2 T. sugar
2 tsp. punpkin pie spice
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
